Following Monday’s story on gallstone theft at a Queensland abattoir, the question of what these cattle byproducts are worth has been raised again. Some have suggested that processors are making a fortune from them, at the expense of beef producers.

Purity

In the study of gallstone composition, 2148 stone samples were analyzed by spectrophotometry and infrared spectrography (Table 1). Chemical substances detected in each sample were classified as “main” (N = 1847), “intermediate” (N = 112) or “trace” components (N = 1074). The components were assigned as main when they accounted for more than 30% of the weight of the gallstone, intermediate if they were between 10 and 30% of the weight and trace if they constituted less than 10% of the weight.
The majority of the gallstones (N = 1847) contained cholesterol. The proportions of bilirubin and calcium were also higher in cholesterol-dominant stones than in other types. Bacterial factors that facilitate the formation of pigment gallstones, such as beta-glucuronidase and phospholipase, were not found to be correlated with the composition of cholesterol gallstones.
Cholesterol is an essential fatty acid in human health and it is a major component of bile. However, bile contains only about 5% of the fatty acids necessary to promote cholesterol precipitation from phosphatidylcholine.
