Sunshine Trading, a family business that claims to be “the market leader in the sale of cattle gallstones”, has a nationwide monopoly over the gallstone white market. They rake in an estimated $11.5 million USD a year from countless slaughterhouses across all Australian states and territories.

Gerard Murtagh, Sunshine Trading’s director of international sales, says the company has no intention of slowing down. He predicts that gallstones will continue to be a lucrative source of income for the gutties on the kill floor as long as there’s demand for bilirubin-based medicines in China.

For the past decade, Sunshine Trading has been delivering gallstones to abattoirs from across Europe and ex-soviet states like Ukraine. But in recent months, gallstones have started to flow from regions spanning Africa and central America as well.

The demand for ox gallstones in Cyprus is growing, particularly among the young and healthy. As a consequence, it is expected that the price will continue to rise.
